Our Core Strength

·         Passion for wine that unites us and pushes us to improve our wine.

·         Tradition that helps us maintain the art of wine making which has been passed on to us from thousands of  year and has helped us in creating one of the winest wine and bring the beauty of our land to the people

·         Our Commitment to excellence where we monitor very closely every single bottle produced in Midalidare Estate - from grape ripening, through vinification and barrel aging , to the bottling itself.

What we do

We have more than 160 ha of vineyards which helps us choose the best grapes for our wines. We grow our own grapes, do fermentation, and age our wines for best quality. Most of the viticulture operations are done manually as quality is our top priority and our winery has the most modern control methods in every stage of the production process.

We grow the following white varieties - Pinot Gris, Semillon, Riesling, Traminer, Chardonnay, Viognier and our emblematic Sauvignon Blanc. The red varieties are represented by Malbec, Merlot, Syrah, Cabernet Franc, Cabernet Sauvignon, Petit Verdot, Mourvedre, Pinot Noir.

About the Region

Midalidare is located at Mogilovo village where the climate is humid - continental with more than 2800 sun-shining hours annually and clear weather for more than 100 days a year. The typical micor-climate for the area includes hot summers and cool nights with mild winters.

We recently planted new vine arrays in Shipkata area and partially in Dabovets.

Our Vineyards

Our vineyards are equipped with monitoring equipment that ensures the correct management of the vineyards. Our vineyard agriculturalists - Ivan kolaksazov and Francesco Fogolin are one the best in the business. The cultivation and growing of the vines and maintaining quality of grape vintage is there primary responsibility.

Harvesting Process

To avoid crushing or damaging of grains, Grape is harvested by hand in boxes of 10-12 kg. We have our own cellar where we cool them in refrigerators for 24 hours and then manually gran by grain, pressed with caution, destemmed and transported by gravity into a vessel, to undergo alcoholic fermentation

Fermentation Process

Our fermentation barrels are specially selected depending on the grape variety and wine type. The red wines from the highest class are left to ferment in 400 liters French oak barrels that ensure additional concentration of aroma, structure and aging potential. All barrels in Midalidare Estate are used up to three times maximum.

Aging is done in French 225 liters barrels and are constantly inspected for changes in wine quality resulting from the contact between the wine and oak timber. Our French oaks are taken from regions of France with different seasoning of wood. An enologists decides on when a wine is ready to be drained from the barrels.
